Mix ingredients till just blended. Don't try to beat out all of the lumps. Overbeating makes tough pancakes.

You may not need to grease a non-stick griddle.

For uniformly shaped pancakes, use a round ice cream scoop to drop batter, or a quarter cup measure.

Thin or thick? Letting the batter est for a few minutes will thicken it. Adding an extra tablespoon of milk will thin the batter out.

When the entire surface is bubbly, then turn the pancake. Turning too soon will leave a liquid center and multiple turns will make the pancakes tough. The second side will take HALF of the time that the first side did. Lift a corner to make sure the pancakes are brown enogh before turning.

Tough pancakes? Griddle temperature too low. If not at 375, the pancakes will take longer andbecome dry and tough.

Turning more than once will toughen.
